Crock Pot Corned Beef and Cabbage

package of baby carrots
small red potatoes
3 garlic cloves
2 bay leaves
1/2 tsp peppercorns
2-3 med onions quartered
1 cup Irish beer
small cabbage, cut in wedges

Place in crock pot. Add cabbage after 3 hours. Cook another 3 hours.

The meat is not especially healthy. The vegetable haves been doubled and red potatoes used instead of white potatoes.

Roasted Mushrooms

Roasted Mushrooms

Mix together 1 tbs olive oil
2 tbs balsamic vinegar
1 tsp dried oregano

Toss halved mushrooms
place on presoaked wooden skewers

Roast at 350 for 10-12 minutes on a foil lined cookie sheet



Variations:
flavored infused olive oil
minced garlic
dash of soy sauce
green onions

carrot sticks
zucchini sticks
brussel sprout haves
cabbage slices
peaches
